This high-protein pistachio lava cake bakes in the microwave in 60–90 seconds with no butter and no refined sugar. Botenz Pistachio Powder gives it a deep pistachio flavour and a gooey centre that flows when you cut in. One bowl, six ingredients, and a dessert that actually delivers 21g of protein.
natural or sugar-free maple syrup

Lightly grease a microwave-safe ramekin (≈250 ml) and set aside.
Whisk egg, milk and natural or sugar-free maple in a bowl until smooth.
Add Botenz Pistachio Powder, baking powder and salt. Whisk to a thick, pourable batter.
Cook on HIGH until the edges are set but the centre still looks soft and wobbly.
Rest 1 minute, then run a knife around the edge and flip out. Top with crushed pistachios.
