Ingredients:

• 100g Botenz peanut cacao butter powder

• 400ml coconut milk, full-fat

• 3 tbsp maple syrup

• 1 tsp vanilla extract

• ½ tsp cinnamon powder

• Pinch of sea salt

• Chopped almonds for topping (opt.)

(1) Whisk powder.

In a bowl, whisk peanut cacao butter powder with cinnamon and salt until combined.

(2) Heat milk gently.

Warm coconut milk in a pan over low heat. Do not boil, just warm through.

(3) Mix wet ingredients.

Add maple syrup and vanilla to warm milk. Stir until dissolved completely.

(4) Combine all.

(5) Pour into molds.

Pour mixture into kulfi molds or small cups. Leave space at top for expansion.

(6) Freeze until set.

Freeze for 3-4 hours until completely solid. Sprinkle almonds before serving.

Tips & Upgrades

Dip molds in warm water for 10 seconds to release kulfi easily.

Try adding a pinch of cayenne for authentic Mexican heat.

Store covered in freezer for up to 2 weeks.

Use silicone molds for easiest removal and cleaning.
