Combine pistachio butter powder in a large mixing bowl.
Whisk in cooled espresso, Greek yogurt, maple syrup, and vanilla until smooth.
Mix until a firm, moldable dough forms. Add more yogurt if too dry.
Roll each ball in cocoa powder until fully coated.
Refrigerate 30 minutes for firm texture. Store covered up to 5 days.
