This traditional Indian sweet gets a powerful protein upgrade without compromising on that signature dense, creamy texture. Made with Botenz peanut butter powder, each square delivers serious nutrition while staying true to barfi’s beloved melt-in-mouth feel.

Ingredients:

• 120g Botenz peanut butter powder

• 80ml coconut cream or heavy cream

• 40g powdered erythritol or stevia

• 2 tbsp coconut oil, melted

• 1/2 tsp cardamom powder

• Chopped almonds for topping (opt.)

(1) Line square pan.

Line a 20x20cm pan with parchment paper for easy removal later.

(2) Mix dry ingredients.

Whisk together peanut butter powder, erythritol, and cardamom in a large bowl.

(3) Add wet ingredients.

Pour coconut cream and melted coconut oil slowly while stirring continuously.

(4) Knead into dough.

(5) Press and garnish.

Press mixture firmly into pan and sprinkle chopped almonds on top if using.

(6) Chill and slice.

Refrigerate for 2 hours until set, then cut into 16 squares and serve.

Tips & Upgrades

Add coconut cream gradually – too much liquid makes the barfi soft

For extra richness, roll each square in desiccated coconut

Store covered in fridge for up to 5 days

Let squares come to room temperature for 5 minutes before serving for best texture
